Potato Pancakes (Latke)

Ingredients:
Potatoes, grated
Onion, grated
One egg or egg replacement
Salt and Pepper
Oil, for frying

Directions:
1. Grate the potatoes and onions.
2. Place them into a cheesecloth or thin dish towel, squeeze all the excess liquid out of them.
3. Mix in one beaten egg and salt and pepper.
4. Heat oil in frying pan. Form pancakes and place in hot oil.
5. Cook 1-3 minutes on each side until golden brown.

6. Serve hot and tasty!
